I have a question about making use of the one custom variable allowed "[%custom%]." For instance: If I have a dropdown that offers choice of color, I'd like to list the choice they've made on the Thank You page.

There are no parameters available to display "options" . Custom variable is not related to this but if you append &custom=anything to your button code, and use [%custom%] on thank you page, it will be replaced with "anything".
