Is it possible to get these at purchase time via POST?

(also I still need to know if _all_ variables are posted at purchase time, or only a few).

Yeah I'm sure I can pull it from the other pages, but it would make my life much easier if such info was also available / posted when "Send payment data to your server" is enabled.

That is server to server communication. Payment processors sends us data that we send you. There is no browser involved and thus there is no HTTP_USER_AGENT and IP Address.
