I love your services so far. They work wonderful with my current website. I am currently having a slight issue however. I am releasing a downloadable copy of my DVD. My DVDs range roughly from 200-1.5GB in download sizes.

I read on the FAQ that it is possible to link to downloads, but would the links be protected against link sharing? What would you recommend me do about this predicament? Do I need to upgrade my plan?

For $18 plan, you can link to the files on your site. The download process stays the same and buyer is never revealed the file location, whether it's on your server or ours. So, I'll recommend going for $18 plan and then provide file URL's (press "more options" while adding the product) rather than uploading the file to E-junkie.
