I am interested in your service. I am a web designer and would use your service to set up e-commerce on my client's websites. In doing so, would I set up an e-Junkie account for each client? Also, when you sign up, do you then choose the number of products to sell at that time, which determines the monthly cost?
And lastly, I signed up for one-week free trial to test your service, but I will not have any products to sell. Do I need to manually cancel before my week is up or do you send an email notice beforehand?

Yes, you will need to set up an e-junkie account for each client.
You can add as many products as you want in the trial. Based on the number of products you have, you'll choose a subscription plan in the seller admin.
You can later on upgrade or downgrade that based on how many products you want to keep in the system.
The account will be disabled automatically if you don't subscribe after the grace period is over.
