Do I have the ability to set a shipping price per item, not necessarily per ounce?

It's the same thing basically. If you enter the price per ounce as 1. Then the ounces you enter for each item becomes it's shipping price as:

Shipping Cost = Ounces x Price per ounce

If you set price per ounce to 1

Then,

Shipping Cost = Ounces x 1

So,

Shipping Cost = Ounces
