So, I'll be offering a set of five WordPress themes, and I'd like the first ten customers to get them for $10, the next 10 will pay $15, and the next ten will pay $20.

How do I do this - with variants?

Actually, it'd be easier to use Cart Discounts, each with a limited use count. Add your product at the full price, then go into Admin > Cart Discounts and create an automatic discount (leave Discount Codes blank) that takes $x off the Item Total with max use count of 10. Once your first 10 orders come in, delete that discount and create another 10-use discount for $y off, etc.
