It appears that inventory can be managed through your application but I just need to confirm that this is true. Also, how does our client add, remove, update inventory? Where can I find a demo or screenshots of this interface?

Client adds inventory while adding the product. It gets reduced automatically for each sale/ free give away (Admin > Send free thank you email) and can be updated from Admin > Edit Product.

Is there a way to controll the quantity amount of products as most of my products are one of a kind?
I would like to be able to disable the quantity when needed, and I have a limited stock on other items that I will need better controll of the quantities as per my inventory.
