Hello I'm a E-Junkie Newbie!

I want to do a soft launch of my product to get feedback.

To this end I would like to charge $0 and then if they don't give feedback within 7 days with an online form, charge them for the product.

Is that feasible with e-junkie? Can I set an automatic change in the amount charged from $0 to X amount after a certain number of days or some other criteria?

I know I responded to your question via e-mail, but I will also respond here. E-junkie is not able to charge, or not charge, a buyer at one point and then charge them a week later automatically. It might be possible to set this up with the payment processor, but you would need to check with them on weather or not this is possible.
