I am transferring my online business to another group of people. We're going to take the website offline for 3 weeks while we transfer stock. Is there a way to protect against anyone having a cached page of the website and disable the Shopping Cart buttons so no orders come in?

You can go to your Seller Admin > Account Preferences > "Make all items 'unavailable' for purchase until" some future date. If you don't have a specific date in mind, just set it for sometime far into the future, then remove that setting when the site's ready to take orders again.
