I sell tshirts on my site, and use variants for size. The one thing e-junkie doesn't have that I could really, really use is inventory control on variants.

Any plans for developing a feature like this in the near future?

Actually, you can already use Inventory Control with Variants. The position for 'stock' on each line of the Variants configuration is where you would specify the inventory stock count for each Variant:
