Generally, we ship to the US + Canada.

I have one product (out of 10) that I can't ship to Canada.

How can I restrict the product so the buyer can't use Canada as a shipping destination?

There's no way to make that restriction on a per-product basis in our settings. You would have to post a warning on your website that you can't fill orders for that specific product if they want it shipped to Canada and then cancel or reverse any orders made despite that.
