Can we have a keycode value as part of the checkout process? A generic text identifier string, for example?

There is no way to add that in the cart itself. However, you can create that field per product using our "variants" feature (http://www.e-junkie.com/ej/help.variants.php)

I have a product that I plan on selling that may need to be personalized for the customer, for example a polo shirt with the customers name embroidered on it, I imagine that I can easily create an item in the shopping cart offering the polo shirt and the different sizes available, will your shopping cart allow me to create and or use a custom field such as a text
box field that would allow my customers to type in the name that they want on the polo shirt, if this is possible am I limited in the number of custom fields that can be used per product?
