I could not find any info on invoicing, shipping labels or outputting sales data to an accounting system.

We don't have an invoicing system, although you can set a product price to 0 and use that product's purchase button to accept any amount.

We don't do shipping labels.

For outputting sales data to an accounting system, you should rather use the payment processor's data as we don't have accurate records of refunds, reversals and canceled reversals.
